  1. For black bean mash:
  2. 1 1/2 cups black beans
  3. 1/2 - 1 teaspoon grated red onion
  4. 3/4 teaspoon salt
  5. 1/2 teaspoon ancho chilie powder
  6. 1/8 teaspoon cumin
  7. 1/2 teaspoon lime juice
  8. Dash smoked paprika
  9. For tostadas:
  10. 4 small corn tortillas
  11. 4 large eggs
  12. Black bean mash
  13. Salsa Ranchera
  14. Other toppings: cilantro, Cotija cheese, avocado, sour cream, hot sauce, etc.
Gluten Free? Swap out the tortillas for brown rice tortillas or your favorite GF tortilla. There are so many options for other toppings as well as what I used, such as bell peppers, jalapenos, poblanos, lettuce and onion. Whatever floats your boat on this one.
