Little Gem Wedge Salad w/ Herb Dressing - A light and refreshing new take on the classic wedge salad. If nothing else make this dressing, it’s soooo good. (Vegan & GF) | RECIPE at
Yield: 3-4 servings, or 6-8 side servings
  1. For the salad:
  2. 3-4 little gem lettuce heads, halved lengthwise
  3. radishes, thinly sliced
  4. cherry tomatoes, halved
  5. red onion, thinly sliced
  6. For the dressing:
  7. 1/3 cup Just Mayo
  8. 1/2 - 1 teaspoon dijon mustard
  9. 1/2 - 1 teaspoon apple cider vinegar
  10. 1 garlic clove, pressed
  11. 1/2 ounce fresh chives, finely diced
  12. 1/3 ounce fresh basil, finely diced
  13. 1/2 - 1 teaspoon honey, agave nectar, or maple syrup (optional)*
  14. s&p to taste
  15. water to thin
*If you find the dressing too acidic or tangy, or like a slightly sweeter salad dressing, simply add a little sweetener to taste. For additional crunch, you can top the salad with hemp seeds or another seed/nut of choice. I've also added in fresh parsley at times, as well as fresh tarragon to the dressing for an even more herby flavor.
