Yield: 12 bundles
Ingredients:
  1. 1 large red pepper, cut into 1 inch pieces
  2. 1 medium red onion, cut into 1 inch pieces
  3. 1 yellow squash, cut into 1 inch pieces
  4. 1 zucchini, cut into 1 inch pieces
  5. 8 ounces cremini mushrooms, halved or quartered
  6. 1/2 pint cherry tomatoes, halved
  7. 2 tablespoons olive oil
  8. 3 garlic cloves, pressed
  9. 1/4 teaspoon dried thyme
  10. 1/4 teaspoon dried oregano
  11. 1/2 teaspoon salt
  12. fresh cracked pepper
  13. 1/2 – 1 cup shredded mozzarella (vegan, if desired or omit) 
  14. 8 – 10 phyllo sheets, thawed
  15. olive oil for brushing
  16. optional: serve with marinara or pesto

Tips on using phyllo included in post. For a thicker phyllo cup use five sheets instead of four. Vegetables can easily be swapped out for others, or doubled up if certain vegetables are omitted. Vegetables do not need to be perfectly cut, a rough chop can suffice.
