THE avocado toast to end all avocado toasts.

It starts with perfectly crisp and crunchy toasted sourdough slices (unless your toaster is crap like mine, then you get what you get) that are slathered with roasted garlic and then layered with avocado. Finally, a sprinkle of hemp seeds, red chili flakes, and a little salt and pepper to achieve the greatest avocado toast. EVER.

So basically, what have we learned already? That we’ve all been doing avocado toast wrong! And that we have to make up for lost time and consume as much avocado toast as we can now. Which if you’ve ever even peeked at social media, Instagram in particular, you might think that’s all people eat anyway. Avocado toast everywhere.

Okay, truth time, I’ve actually been eating my avo toast this way without sharing it with you (unless you are following Noming on Instagram – which you should be if you aren’t because that’s where ALL the sneaky peeks happen) for quite some time now. I actually wanted to share a yummer little treat with you, coconut bites which are sort of macaroons… but I’m kind of Type A and need to make things multiple times before I can even think of putting a post together for it. All the time I see bloggers go to the store, say they are going to try and make a dish and then post it three days later. Not me, it’s like I’m feeding the Queen and have to make sure it’s legit before it can even be considered for hitting the web. So, those little bites are going for another round this week and hopefully that means they will be yours next week. Hopefully. Unless I get distracted, like I did with butternut squash on Monday. Soooo maybe… oh hell let’s just hope you get a dang recipe at the rate I work.

Well lovelies, I’m going to leave it there. This avocado toast requires nothing else than that it is the ultimate toast. But if you have a hankering for some more roasted garlic in your life, you can try yours hands at Roasted Garlic Walnut Pesto, which also made it’s way into a Mean Green Pesto Pasta that is slap yourself silly delicious. Just sayin… roasted garlic for life.

Also if you hadn’t noticed or you’re new (yay you!), I’ve done this post a smidge different. With all the content/writing mainly together and then the photos thrown together. What’s your thoughts? Do you prefer this style or the old way? Hmmmm…. love to hear what you think.  `

Yield: 2 servings

Ingredients:

  1. 4 slices sourdough bread*
  2. 1-2 roasted garlic bulbs, cloves removed
  3. 1 large avocado, thinly sliced or mashed
  4. hemp seeds
  5. red chili flakes (crushed red pepper)
  6. salt & pepper

Directions:

  • Toast slices of bread. Smear slices with roasted garlic cloves. Next lay avocado slices or spread mashed avocado on top. Then sprinkle with desired amount of hemp seeds, red chili flakes and salt and pepper. Enjoy immediately! 

Notes:

Your favorite whole grain or gluten free bread would work too!

    Meg this is just great – what beautiful toast! I have to giggle and agree with you – it truly does seem as though this world is fueled off of avocado toast (but a healthy world we are then!). I seriously love the combination of sourdough, chili flakes, and hemp. This will be my breakfast soon. ♥

      Thanks dear friend! I swear I could post the same photo of avocado toast every day for a year and that IG account would be more popular than my actual one. People go craaazy over their avocado toast. I hope you get a little crazy over this version, and dance like no one is watching with it in hand. Because that’s what it makes me do.

    This looks really great. You made me laugh with all of the Instagram love that Avocado gets. Same thing happened on my Instagram account. I think as soon as people see avocado in any form they just instinctively hit the heart. Frankly, I get it! I just polished off a big plate of guacamole tonight. When I made it I was thinking jeez I’m going to have so much leftover…uhhh not so much.
    P.S. Good luck with those books! Self-help always starts at the bookstore and ends when I get home and set them on the pretty book shelf :-)

    Gaah I have got to try this roasted garlic thing on my avocado toast! Plus that little bit of heat from the chilli sounds divine. Also just wanted to say that your writing is super entertaining, I love it – feels like I am hearing you talking or something! And in answer to your last question – I really don’t know what I prefer, seeing as I am trying to figure out the same thing for my blog – photos together or split around words? Still unsure. But maybe that means it doesn’t really matter? Sorry, so unhelpful over here! :)

I try to do everything off of feeling, and while I like the content and photos together I think I need to change up the font and sizing of things a little to accomplish the feel I’m going for.     Avo toast is the best! I never thought of adding roasted garlic, but that sounds amazing. I also really like adding goat cheese for total creamy overload, but it’s so good! Can’t wait for the coconut bites – thanks for being so thorough in your recipe testing (I think many bloggers overlook recipe testing)! :)

      Damn right it’s the best ;) I love to add Kite Hill’s artisan cheese on my toast too! Which I’d say is an equivalent to goat cheese, so right on the money with that idea Emily! And thanks for the recipe testing support. It sure is a pain, but I’d hate to make something once and think it will turn out that way each and every time for someone else. I cannot imagine how cookbook authors do it. I’d be in the looney bin from all the testing I would force myself to do.

    I think I’ve been living under a rock because I’ve never actually put avocado on toast. And I recently learned how to roast garlic. And I’ve also never tried hemp seeds but they sound intriguing. Basically…ima make this. Thank you!!

      Oh Sarah. Well welcome to the avocado toast light :) Glad you made it – and that you just learned how to roast garlic, perfect timing! Hemp seeds are perfect little protein and nutrient dense seeds. They really don’t have much of taste when sprinkled on foods, so they are great to throw on anything and everything to give it a little boost. I love it on toast, pasta, sprinkled on smoothie bowls, etc. So I hope you give them a try, they are definitely a fav of mine. AND I hope you love your first go with avocado toast… there’s kind of reason it’s “all the rage.” Thanks Sarah!

    I made these this Morning and I must say that they are so delicious and flavorful!! I used garlic powder but I’ll be sure to roast some garlic before hand next time. I just read the rest of the blog after savouring the entire dish and forgot to take pictures. Lol
