This is the ultimate flavor combination… that is going to have you shouting at every single person you know that you have a new love in your life. So grab some throat lozenges because this shout worthy chicken is going to rock YOUR world.

To be frank, I am completely obsessed with this chicken. I cannot believe just how much flavor can be achieved WITHOUT marinating. Did you catch that? There is absolutely NO marinating involved. Is that even possible? Chicken breasts are not super flavorful on their own. Actually they are pretty dull and lackluster. They need a little love to really shine. But in this case they are flavor central.

And it’s insanely simple.

Maybe I should rename the blog Noming thru Life Simply… as my new favorite word is “simple.” I can’t help it. Seriously though, if you see a recipe that says “simple” yours ear perk and your tummy starts to (good) rumble. It means that food is going to happen without an insane amount of thought or effort. That’s the best kind of recipe, isn’t it? Simple but flavorful. And that’s exactly what this delicious stuffed chicken breast brings to the table.

If the word spicy is freaking you out. Deep breath. You can easily down the spicy kick by using less Sriracha. Even a little Sriracha can go a long way in terms of flavor and what it does for this dish. If you are a heat freak, crank the Sriracha or better yet, toss in a little crushed red pepper and get yourself a glass of milk, champ!

As a Canadian runaway (okay not really, I was three when we moved on to the next adventure, overseas) I live and breathe hockey, Tim Hortons and anything/everything maple syrup. Back in the day we made our own maple syrup in Traverse City. Maple syrup straight from the tree that’s just been made… mmmmm oh my! Peel me away from the jar already!! And if you’ve ever had the real deal you know there is NOTHING like it. Nothing. It’s soooo dreamy. Is it wrong I now want to plant a massive tree in my teeny tiny city sized backyard just to tap it and have fresh maple syrup? Please say it’s okay.

When it comes to maple syrup go for the real deal. Please. And if you want to get specific I’m a huge advocate of Grade B which is darker, richer and most often slightly thicker. Grade B is also great for baking based on those factors as well.

On another foodie note. Did I tell you I love cheese? Actually my love for cheese runs deep. I don’t even want to think about how many blocks of cheese I consumed when no one was looking when I was young. Cheese on crackers. Cheese sandwiches. Cheese on my cheese. You get the idea. Now that I have “matured” I’ve expanded past the standard block of colby jack cheese. And let me tell you it’s a very big cheese world out there. A little daunting at times too. But then there are classics like gouda, a semi-hard, rich smooth cheese. And in this case it’s smokeaaay too! Which just happens to be the perfect combination with the sweetness of the maple syrup. Yummm!

Well are you sold yet? I was sold at maple, but I don’t think that’s much of a shocker. But for reals yo. Only four ingredients, less than 30 minutes in the oven and BAM flavor explosion in your mouth. Stop waiting start noming. Or send me maple syrup so I’ll shut up.

Ingredients:

  1. 1/3 cup maple syrup Grade B
  2. 1/2 teaspoon Sriracha
  3. 3 chicken breasts, boneless and skinless
  4. 3 ounces smoked Gouda cheese

Directions:

  • Preheat oven to 400 degrees. 
  • In a small bowl mix maple syrup and Sriracha until combined. Set aside.
  • With a sharp knife, butterfly the chicken to create a pocket. Slice cheese into three even pieces, placing one piece inside each pocket. Press the chicken gently to close and insert two toothpicks into each breast to secure and seal chicken. If necessary roll the chicken to create a better seal, then secure with toothpicks. 
  • In a lightly coated/sprayed 8×8 inch pan, place each chicken breast so that they are not touching. Lightly sprinkle salt over chicken. Pour maple Sriracha sauce over chicken and place pan in oven. Bake for approximately 22-25 minutes, or until cooked through, spooning sauce over top of chicken half way through. 
  • Serve immediately with sauce from pan drizzled over top. Garnish with additional cheese and/or parsley.

Notes:

If you can’t find smoked Gouda, try to find a comparable smoked cheese.
